  Stevia the Sweet Herb

 

"Where else on the earth is there a plant like Stevia?  The leaves are a delicious and nutritious food, a fantastic no calorie sweetener, an incredible external and internal medicine, and when gently extracted into a water-based concentrate, is wonderful for smoothing wrinkles, softening and beautifying the skin and healing blemishes and sores."

 

Sugar to Stevia

Sugar Amount Equivalent Equivalent
  Stevia White Powdered Extract Clear Stevia Liquid Concentrate
1 Cup 1 teaspoon 1 teaspoon
1 Tablespoon 1/4 teaspoon 6-9 sprays
1 teaspoon 1/16 teaspoon (pinch) 2-4 sprays
 
Stevia Tea Bag (green tea) when made as tea will sweeten 2 cups of liquid.  Place used tea bag over eyes like cucumbers to soothe the eyes, reduce wrinkles and soften skin.
Green Powder Stevia is half as sweet as white so expect to use twice as much. Taste first. 
1-2 Tablespoons powder equals 1 cup of sugar.
1teaspoon of dark liquid equals 1/2 cup of molasses.
Stevia packets like most sweetener packets equals 2 teaspoons of sugar.

 

Recipes

Lemonade   makes 10-8 oz. servings

2 cups fresh squeezed lemon juice     8 cups water

2 teaspoons stevia clear liquid concentrate

Ice cubes & lemon slices for garnish

Combine all of the ingredients in a pitcher and stir until well blended

Pour into ice-filled 10 oz. glasses, garnish with lemon slices and serve.

 

Lite Peach Mousse   makes 12 servings or as pie filling

1/2 cup white grape juice       4 cups sliced peaches    

1/2 tsp. stevia powder          1/4 cup cornstarch       

1/2 cup white grape juice juice of lemon

1/2 tsp. almond extract         1 recipe Fluffy Vanilla Whip

Fresh berries,garnish

Bring to boil 1/2 cup grape juice and peaches in saucepan.  Reduce heat, simmer stirring as needed. Mix stevia, cornstarch and 1/2 cup grape juice in cup.  Stir into simmering peaches, cook until thickened.  Remove from heat, stir in lemon juice and almond extract. Cool to room temperature. Fold in Fluffy Vanilla Whip, spoon in bowl. Cover and refrigerate. Garnish.

 

Fluffy Vanilla Whip   makes 2 1/2 cups

2/3 cup water           1 tsp unflavored gelatin    1/2 cup nonfat dry milk

1 1/2 tsp. vanilla extract  1/2 tsp. stevia powder     3 Tblsp. vegetable oil

Water in small pan, sprinkle gelatin on water, allow to soften 5 minutes.  Over low heat, stir to dissolve  gelatin. Stir in dry milk, vanilla extract, optional dash of salt and stevia.  Chill to unbeaten eggwhite consistency, then beat 4 minutes.  Gradually add oil while beating, 1 minute.  Mixture will be fluffy.  Refrigerate, Stir briefly before serving.  Vary flavor by adding spices or change extracts.
